Lunch was a green salad with asparagus and peas, except broccoli instead of asparagus because I managed to lose it, garbanzo beans with cumin, garlic powder, and some salt and pepper, and some rice crackers.
Dinner was just last night's leftovers as I forgot to marinade my tofu (yes, that's right, tofu. Kelley doesn't go halfway). I skipped breakfast because I slept in way late, bad me. Oh, and John from class treated me to Starbucks so I had a caramel apple cider. Also not fantastic, but there are worse drinks. I think.
But man, this tofu I'm making tomorrow? I'm getting pretty psyched about that. The marinade smells amazing.
Diabetes Aversion, Ho!
In November of 2010, my mother became the third person in my immediate family to be diagnosed with diabetes. This blog is a way to hold myself accountable for healthier eating to prevent myself from ending up the same way.
And, inevitably, I'm sure there will be some nerdy love and ranting down the line.

In the Beginning
I'm starting out with the eatingwell meal plan. We'll see how it goes. For dinner, it's brown rice, steamed broccoli, and grilled sirloin with a coffee bean peppercorn crust. It turned out quite good, the coffee really heightens the flavor of the sirloin.
Dessert is a strawberry raspberry sundae. I had leftover lite ice cream so I used that instead of frozen yogurt. The sauce turned out about as expected for a berry sauce, but worked really well with the dinner.
